Buffalo Burger

What You Will Need:

Ground Bison Meat
Muenster Cheese, diced
Hamburger Buns
Tomato Slices
***Lettuce Leaf
Red Onion
Avocado, sliced
Salt, to taste
Pepper, to taste
Pickles, optional

I've never eaten bison meat before, it was actually pretty good

*I don't have a grill so I cooked this on the stove top. They would have been better on the grill 
**I used too much chesse with mine, next time I will use less
***I didn't have a lettuce leaf on hand so I used a handfull of salad I had

Make It:

In a large bowl, mix together the buffalo and cheese until well combined. Shape the mixture into a patty a little larger than the bun. Season with salt and pepper

Place the burger on the grill or pan until desired doneness, during that last few mintues of cooking, toast the buns.

Put burger together by stacking all of your ingredients

Patties formed. I used way too much cheese for my burgers

Vegetables with Yogurt Cumin Sauce

What You Will Need:

1 Cup plain Greek Yogurt
1 Tablespoon Tahini
2 Tablespoons Lime or Lemon juice
¾ Teaspoon ground Cumin
1 Garlic clove, minced
Salt(to taste)
Pepper(to taste)
6 Zucchini, cut lengthwise
6 Squash, cut lengthwise
3-4 Tablespoons Olive Oil
¼ Cup chopped Parsley

`you can use the grill, broiler, or stove top. For this dish I used the stove top.


Make It:

Mix together yogurt, Tahini, lemon juice, cumin, and garlic, pinch of salt, 1-2 tablespoons of olive oil in a small bowl.

Heat broiler, grill, or stove top. Brush the vegetable with olive oil and season with salt and pepper. Cook until browned or if using stove top, cook until tender. Turning a few times.

Place vegetables on a platter, sprinkle with chopped parsley. Serve with sauce.

Tilapia with Grilled Peppers and Onion

What You Will Need:


½ Inch thick slices of White Onion
Sweet Bell Peppers, sliced
4 Tilapia Fillets
*Salt(to taste)
*Pepper(to taste)
Jalapeno, thinly sliced
Garlic, minced(optional)
Olive oil
**Tortillas


*I substituted the salt and pepper with some Cajun seasoning. This was just a personal preference.
**With the tortillas, you can make this dish into fish tacos.
***You can put this on the grill, I don’t have one. The stove top worked out just fine


Make It:


Heat stove top.


Cook the sliced vegetables until soft. Add a little salt and pepper


Sprinkle fish with salt and pepper, heat the skillet. Add a little olive oil so the fish doesn’t stick. Cook the fish to your preference.


Serve. I plated this dish with the fish on top of the bed of vegetables. If you would like to make tacos, warm the tortillas and add some veggies along with a cut of fish.

Honey Cashew Chicken with Rice

What You Will Need:

Brown Rice
Boneless Chicken breast, cut into cubes
2 Tablespoons Cornstarch
1 Tablespoon Canola Oil
1 Tablespoon Sesame Oil
2 Cups Broccoli Florets
1 Cup Frozen Shelled Edamame
2 Minced Garlic cloves
Yellow onion, finely chopped
Red Bell pepper, chopped
½ Cup dry-roasted cashews, unsalted
1 Tablespoon Rice Vinegar
3 Tablespoons Honey
2 Tablespoons Low Sodium Soy Sauce
1 Tablespoon Sriracha(hot chile sauce)
Salt(to taste)
Pepper(to taste)


Make It:

Cook Rice. Combine chicken, cornstarch, salt, and pepper. Toss to coat.

Heat large skillet over medium heat. Add canola and sesame oils. Add chicken mixture, and sauté until lightly browned. Increase heat to high, add broccoli, edamame, garlic, yellow onion, and red bell pepper. Cook until vegetable are crisp tender and chicken is done, stir frequently. Stir in cashews.

Combine vinegar, honey, soy sauce, and Sriracha in a small bowl. Stir with a whisk. Add the mixture to the chicken mixture, toss to coat. Serve over rice.

Spice Rubbed Salmon


What you will need:


A couple pieces of Salmon
1 1/2 Tablespoons Chili Powder
1/2 Teaspoon Dried Oregano
1/4 Teaspoon Salt 

*This recipe can be in a pan on the stove top, I like it in the oven. It taste delicious both ways.
**Sometimes I make some brown rice for a side. This day I used vegetables(corn & broccoli)
***I like to cut the skin of my Salmon

Make It:

Combine the spices in a bowl. Pat the spices on the Salmon.

If using the stove top, heat some olive oil in a large pan and cook on medium heat until desired doneness.

If using oven, place Salmon on oven safe pan lined with non stick foil or foil with non stick spray. Place Salmon in oven and leave in for desired doneness. 

Serve and Enjoy
